if I ph a bucket of water and use it to water my plants throughout the week, will it maintain the ph I set it to on day 1 compared to day 7?

No it will drift, at least water from most sources that contains calcium carbonate. Exposure to the air will cause some of the calcium carbonate to precipitate out of solution and the PH will change. The overall hardness of the water will determine how fast and how much this will take place over a given time. It may be inconsequential or quite dramatic. So just do a test with a bucket of water.
