Indoor Second Grow - Five Mephisto strains in coco/perlite with auto watering

Day 25
Quick update, day 25. Seeing the first pistils coming out of the biggest plant (Orange Biscuits Mephisto). I'm having some troubles with two of my plants, and possibly not maintaining my reservoir correctly. I've got two very very short plants (far left Hubbabubbahaze, and far right Double Grape). I know my pH has been too high, I have been mixing a full reservoir and leaving it for 3-4 days, but I'm finding out my pH is unstable for hours after filling my reservoir, going from 5.7 to 6.3 very quickly. So my plants in coco have been unfortunately drinking 6.3-7ph nutrients. A few of them feel dry, coarse, and crispy. And pretty much all of the leaves on all plants are droopy. Could this be from the pH as well? They're being fed to runoff 3x a day. I'm going to keep an eye on the pH every day for now until I figure out how to hopefully slow the drift.

Did my best to leaf tuck, the fan leaves are gigantic on most of these, they're hogging all of the sun. Any advice on what I should do about my stunted plants would be greatly appreciated! When it's so close to the grow medium I really don't know if I should be doing anything different. It's very hard to tuck a plant that's like 7 inches tall!
