I have a humidistat sensor and a thermostat sensor.
I use Inkbirds.

I usually just hang them down from about the middle part of the light down into the canopy a little bit.

Just curious how others mount their sensors.
 
Presuming there is good internal ventilation/mixing, yes in the tent center at the level of the top leaves and buds, that is at or slightly below the 'canopy,' is likely the best or certainly a good place for environmental sensors. You should generally be most interested in following and controlling what's happening with the top-most, the most productive leaves and buds.
