As a grower, how do you deal with incoherent/wacky state laws covering growing and possession?

I just moved from FL to NC. It took me a minute to wrap my head around the THCA laws. Honestly, I am not sure I actually understand it. No possession limits here, just THCA content. Must be less thatn 0.3%. Funny thing is, after talking to a dispensary owner, I find out that most of the flower being sold as sub 0.3% is in fact of a higher percentage. The way it was explained to me, was that he takes samples during the grow, to be analyzed by a lab. Once they send him back a COA and confirm his weed is within the legal THCA limits, he has 60 days to harvest. So if the flower is 0.3% at the time of testing, I wonder where it is 2 months later. ;) And yes, from the wy he explained it, all the growers in this state do the same thing, they all wait the 60 days. For me, marijuana laws in this country seem like a cruel joke.
