Immature Bud question

So when I grow I find I enjoy the 'tester' buds, or immature buds much much more then fully mature buds. When would be the best time to harvest to keep the effects from the young/immature buds, and also try and get the highest THC/terpene amount. I'm not worried about the yield compared to the immature/high THC buds.
