Spider mites won't live in the soil. Do you have any glue traps around? See anything flying around the soil? Tiny white bugs in the soil is generally springtails or soil mites. Do they jump or crawl? Generally can be taken care of by removing the top inch or 2 of soil and watering through with soapy water for a week or 2
Also finding mold under soil

Pictures help a lot. Most likely not mold under the soil, more likely to be a natural fungus

That should be fine. No reason not to water all the pots. But just do it the next time they need a watering. Overwatering isn't gonna help anything and the mites aren't bad for the plants. They're really friends
