and best chopping practice, should i wait till soil is damp or dry or when is the best time to harvest?

Officially Day 1
Been out all day today so I stuck them in the 22c sun in the garden all day. Opened 2 of the bags of soil and I’m pretty certain it’s full of gnats so I’m grabbing more 2moro and potting up.
