Decided to get Ms. MOG a steak for dinner tonight. She put in 7 days in a row this week and she deserves a special dinner. I just have to be careful about cross contamination. A rib eye and an artichoke for her and I will have an artichoke and vegan crispy patty with gravy. I seasoned the lard rendered from the pork butt trimmings (chicharrones- yumm) with sage, garlic and thyme to see if I can make better country gravy than from the bacon drippings.
