I go for a number of the Pataks pastes. Madras and Tikka Masala are the best for me, closely followed by the Hot and the Mild. They are all excellent flavour. I don't care for the Butter Chicken paste, I find it a bit too sweet, and the flavour isn't my fave. I have also run into a couple Thai pastes that are good, but can't recall the names.

If you like using the curry pastes, try adding some lime zest, especially if you like the Thai spectrum of flavours. I usually use whipping cream to thin out the paste, I just add the two together in the pan and bring to a simmer before mixing in to the rest of the stir fry. :pighug:

Try some coconut milk with the Thai instead of heavy cream. Shit! Got the damn munchies now.... :haha:

Kinda bummed tonight ...
My good friend who was an Army vet that served in Somalia, the Persian Gulf and Desert Storm died of complications due to Parkinson's yesterday....
