Don't forget that Apple, much like Google is gonna collect no matter what you do through their products and devices.....there's a reason the EU always has one or the other or both in the courts.
You’re not wrong, but there’s a world of difference between what Apple and Google do. With Apple, you’re the customer with an actual user agreement. That agreement declares what they are going to collect and that is enforceable in court. With Google, there’s no agreement, so there are no limits on what they can do aside from a legal responsibiity to protect personally identifiable information from being exfiltrated.

Beyond that, when Apple claims to offer a protection, they’re legally obligated to provide at least a facsimile of that functionality. With Google, they owe you nothing every minute of every day.
