Here's this weeks update. My second attempt at the Northern Cheese Haze was successful. Here is day 2. It took about 5 days to sprout. I actually thought It wasn't going to sprout so I tried another with the paper towel method and it's ready to be planted later today. More on that one later. I'm thinking of planting that one in a 5 gallon air pot. Here's day 2 photos.

Here's Day 8 for the Stilton. No issues as of yet. Just feeding small amounts of water.
