@Mike20132 yeah you could buy a pound of center cut and do individual 6- 7-8 oz wellingtons. This is how we used to do them in the restaurants, and then make 1 cut down the middle of wellington stand up for presentation

Does her school have a dental program? Maybe they'll fix her up for free to give someone practice.

They do have a dental at the college but they are now out for summer break. But the orthodontics are fully paid for just a 5-6hr round trip now since she's home.

That's what I did with the last full tenderloin I picked up. quartered it and vacuum sealed three of em. Must say that the likelihood that I sell a kidney and pick up a tenderloin tomorrow has increased dramatically in the past few minutes....
I just cook for me, for the most part, so individual filets will do me fine. Maybe one or two 6oz roasts...
