Parchment pouch?
I use that instead of a lid….just a parchment cover with a small hole in the center. This helps the braising liquid reduce, and helps the meat to brown up really nicely…..rather than put a tight fitting lid and steaming the top half of the meat, and reducing after the fact…:thumbsup:
