Parchment pouch?

I use that instead of a lid….just a parchment cover with a small hole in the center. This helps the braising liquid reduce, and helps the meat to brown up really nicely…..rather than put a tight fitting lid and steaming the top half of the meat, and reducing after the fact…

Haha not really….that helps speed up the process….this consolidates two steps, plus makes the end result come out a little tastier. I
